Wednesday

I don't have much to report today.

Should I tell you that I ate my weight in cheese dip during lunch? OK, I'll leave that out.

I haven't worked out this week. I had a little complication from my surgery that prevented it, but I think I'll be back and ready to go to cardio fusion tomorrow. I did lose .2 pounds this week, so at least the scale is going in the right direction.

Tonight I have a Ronald McDonald House staff dinner at Atlanta Fish Market. I'll try to make good choices there. I'm in desperate need of grocery shopping, so that's scheduled for tomorrow.

OOOh! Lucky ducky! AFM is my fave place on earth. I like the scallops, and I tell them to double my portion of asparagus and hold the potatoes (and the bread-- I can't resist it otherwise). I always feel full and satisfied when I eat there-- delish!

I was recently introduced to Wheat berries and just added them to a salad. They are fun to chew :)

I'm loving roasted vegetables - any kind - cauliflower, bell peppers, brocooli, brussel sprouts, cherry tomatoes, asparagus - cut up and drizzle with olive oil, salt, pepper and smoked paprika - bake at 420 for 20-30 minutes - I love them a little crispy on the edges. YUM! Buy your meat and marinate it for a day or two in advance - then bake and eat with roasted veggies - YUMMY!

lately, i've lightly stir fried peppers, garlic, onion, tomato, zucchini and carrot. 2 batches--one with tex mex spices (cumin and chili) the other with asian (soy sauce and curry) and both with lime bc it's awesome. divide into tupperware or baggies, freeze and throw it on the stove or microwave for a minute to mix with tortillas, rice, noodles, salad--whatever strikes your fancy ;)
