Recipe fun

It's produce basket day! It's produce basket day!

Seriously, that's how excited I am for my bi-weekly delivery from Eat Right Atlanta.

I got a decent number of responses from you guys last time, but I'm hoping for even more this week. Before you go out of town, use your culinary creativity and send me some healthy recipes using one or more of this week's contents:
  • Grapefruit
  • Bananas
  • Kiwi fruit
  • Apples
  • Celery
  • Corn
  • Green Onions
  • Bell Peppers
  • Sweet Potatoes
  • Butternut Squash
  • Romaine Lettuce
  • Tomatoes
Also, if any of you have any brilliant ideas for making grapefruit a little more edible, do let me know. I really want to like it.

As for a weight update, I was down 2.8 pounds this week. But I know I got lucky after my weekend at the Ronald. I have a feeling it's caught up to me this week and I might be in for a gain next week. Fingers crossed I'm wrong.

Speaking of the Ronald, I'm so grateful for the wonderful support I received about my decision this week. I really appreciated your kind words. It wasn't easy, but I'm feeling secure in my choice.

One of my favorites is a fritatta. Saute (use Pam) some of your peppers, green onions, and tomatoes. If you have some mushrooms add them in too. Whisk some skim milk (1/4 cup) with 1 cup of egg beaters.Pour the mixture in with the sauteed veggies and leave on the stove until the eggs set. Put in the oven at 350 to finish off. The best part is, you can take a slice for lunch the next day; it heats up great in the microwave.
Obviously this is not an official recipe more of a technique that you can adapt to whatever you have on hand.

I personally like grapefruit with a little sugar (or Splenda) on it, but I keep reading that broiled grapefruit is supposed to be really good. Try Googling it, you should get plenty of hits.

WW has a good recipe for stuffed peppers, for the bells. I don't have the recipe on hand but I'll try to remember to grab it, though it may also be somewhere on their web site.

Ok - so is this terrible?
Fresh grapefruit juice is really good with a little vodka in it. :)
Seriously though - Fresh grapefruit juice with a touch of splenda and some club soda - very refreshing.

I'm getting the baskets from Eat Right Atlanta too, so I made a few things last night to use up some of the goodies.

Roasted butternut squash: Preheat oven to 400. Halve the squash lengthwise, de-seed. Put a teaspoon of butter in the cavity, sprinkle with a little brown sugar; season w/ salt & pepper. Bake for about 45 minutes. Yum!

I also made cucumber, tomato, green onion salad with apple cider vinegar, sugar, water, salt, pepper.

Lastly, I made "scallion pancakes". Trying to get rid of all those green onions! (Made a basic dough with flour & water, let rest, then rolled out. Brush with canola oil & sprinkle with sliced green onions and salt. Cut into pieces and twist, shape into a spiral, then reroll out into pancakes.) Saute in a hot pan with a little oil until browned on both sides.

i'm catching up, so you may have used you basket already...but i agree cooking with grapefruit is super and surprisingly awesome! It's new to me, but i bet it would be great with some green onion and maybe celery. i'd cook down the celery a little bit, then top some fish with all 3 and a smidge of oil and broil until slighlty browned...maybe some sweet potatoes or corn and tomato on the side...i think i know what i'm trying for dinner now! :)abo
