Food files

I was going to talk today about hitting the reset button, but I'm going to put that off until either later in the week or next week. It feels premature, somehow.

So instead, I'm going to tell you what I'm eating this week and part of next. I had a good weigh-in Tuesday. I lost 2.6 pounds, so maybe things are heading in the right direction again. With that in mind, I feel I have to be extra diligent during the week, because this weekend brings parties and other social occasions that can lead to more calories.

I grocery shopped last night. It had been ages since I'd been shopping, sadly. Before I went, I planned my recipes for the week.

Tonight, I'm making my beloved Gina's chicken rollatini stuffed with zucchini and mozzarella. I decided to try substituting spinach for the zucchini. I'll let you know how that turns out.

Later, I'm going to make (again from Gina at SkinnyTaste) skinny meatloaf cupcakes. I'm going to skip the mashed potato "frosting," though, as potatoes are not something I can keep in my house. How cute are those cupcakes, though? I'm excited to try them. My friend Laura raved about them.

It feels good to be prepared--it makes me feel more in control and less frantic than I've been in a while--food-wise.

Yum!! Please let me know how the meatloaf cupcakes turn out. This week I have been eating hearty turkey chili - a Weight Watchers recipe. Pretty darn good! Tonight, I'm going to probably have a bunless turkey burger with a salad or veggies. I'm going to look for additional WW recipes tonight as well. Good job on the weight loss!

I have made a fritata that I am eating for breakfast. It is great and easy to warm up and I got to use left over spinach and ham and mushrooms.

It was turkey chili at our house tonight, too, with a tossed salad. Later in the week we'll do a simplified paella (adapted from a Mark Bittman recipe), a japanese-style noodle dish with tofu and possibly shepherd's pie (it's getting cold up here).

That rolled chicken dish looks delicious. I might have to make some faux-ricotta (Andrew doesn't eat dairy) and give it a try.

You're doing great, Erika! I hate to cook, so it's always a challenge to find places to eat out that stay on program. Eats on Ponce de Leon is my "go to" place. It's easy to calculate the points because most menu items are very basic (but delicious), and a few are even no points at all!

I'm having Flatouts pizza tonight! Take a Flatouts and brush it will olive oil. Bake @ 350* for 7 mins. Top with pizza sauce, cheese, spinach, mushrooms and fresh garlic! Bake for 7 more mins. To die for:) 6 weight watchers points. Enjoy!
